CHICKEN CACCIATORE
Stove Top
Serves 4 to 6
Ingredients:
2-1/2 (Two-and-a-half) pounds chicken pieces
1 Medium Onion (chopped)
1 jar (14 ounces) spaghetti sauce
1/2 teaspoon dried basil
Methods:
Brown Chicken pieces skin side down over low heat. Cook chicken 10 minutes each side. Sauté onions until soft. Stir in sauce and basil. Cover and simmer 20 minutes. Serve with spaghetti.

Boil up the chicken, take the meat and pull it into shreds, or chop it up in bite size pieces. Put in freezer safe bowl in the freezer for about 15 to 30 mins. Reserve broth as a drink, put skin in small bags and freeze, toss bones etc. Wash up your pot and things used to do your chicken. By now the chicken should be cold. Now add chopped onions, pickles and mayo with a little pepper (salt if no blood pressure problems) and you now have chicken salad. Serve on toasted bread or eat as is. Put some beets on your plates along with slice or two of cheese (if its Cheddar so much the better…LOL. See you do have something after all. And depending on the type of relish you can substitute it for the chopped pickles if you like.
This is what we lived off of for more than a year. Not like you it was me and my daughter …this was all "x" would bring home to eat.
I can pinto beans with fat
Instant rice: enough made for two people
Bread, white or if lucky corn bread
If real lucky cheese and the corn bread.
Make corn bread if you have it.
Make rice for two add a little butter while it cooks and cheese if your lucky to have it.
Now heat the beans up.
Place bread or broken up cornbread on plate, put rice over the top of the bread. Add the beans and soup from them and some butter and sliced cheese if there is any cheese amd you have: breakfast, lunch, and supper for the day. If you aren’t too hungry it will make enough for two days worth of meals.
If you slice liverpudding real thin, you can streatch it out to almost 2-1/2 weeks of meals.
Salmon salad can be streached the same way except you mete it out by the tablespoon if there is no bread to help fill you. Clean the black and sliver stuff off the pink salmon. Pour a table spoon or two of the canned fish oil in a mixing bowl. Add the fish and bones with a tablespoon of mayo if you have it; (if not the oil will hold the fish together some.) If your really in luck add chopped pickes and some of the juice as well to the fish. stir and eat with or without bread.
Hope this helps you for tonight and any other tough times.
And when there is NO FOOD, just tighten your belts and listen to your stomachs growl.
